El Salvador El Borbollon
The Alvarez family has been growing coffee in El Salvador for over 100 years and across four generations. Their award-winning farms are located on the lush green hills of Santa Ana, in the west of the country, whose rich volcanic soils and mild climate provide ideal conditions for growing coffee. The seeds which together make up El Borbollón come from two small neighboring farms: La Reforma and Santa Maria. They are hand-picked and collected in traditional hand woven baskets from December until March by pickers who have been specially trained to select only the best and fully-mature coffee cherries.
El Borbollon mill is managed by Eduardo Alvarez, whose father (also Eduardo) bequeathed to him a passion for growing coffee, and inspired him to always strive for the highest quality. Under Eduardo’s direction, the mill has increasingly accessed speciality markets and has provided key technical assistance and guidance to the farms with which they work.

El Salvador is the smallest of the Central American nations, but do not let its diminutive size fool you. It produces exceptional coffees to a consistently high standard.
The history of coffee in El Salvador is inextricably linked to the development of the nation, itself. Introduced in the late 1880’s, coffee quickly displaced indigo as the country’s chief export, and by the 1920s, coffee accounted for 90% of all El Salvador’s exports.
Despite its small size, the country is efficient and able to maintain high yields thanks to the dedication of producers and the ideal climates for coffee production.
